Ingredients

2 chicken breasts
2 teaspoons olive oil
2 cups spinach
3 tablespoons chopped parsley
½ cup ricotta cheese
¼ cup Italian cheese
pinch of Maldon salt and pepper
1 jar marinara sauce
Parmesan cheese


Directions
Preheat oven to 375 degrees. Heat olive oil on medium high heat; add spinach and parsley. Sautee until cooked through. Remove from heat and let cool.

Cut chicken breasts lengthwise on the skinny edge until it opens like a book. Pound chicken breast until its ¼ inch thick. In a small bowl, mix ricotta and Italian cheese together with the spinach mixture; add salt and pepper.

Spoon into the mixture into the middle of the flat chicken breasts and roll. Place chicken in an oiled cast iron skillet. Cook for 35 minutes. Add marinara sauce to the skillet and cook for another 10 minutes.

Add parmesan cheese to the top of the chicken breasts and broil for an additional 3 minutes. Top with parsley and parmesan cheese; serve.
